Chipolt’s cilantro lime rice seems to be a popular side however, this version in my opinion takes the cake.
The recipe that I am sharing with you is one that my grandma has been making for as long as I can remember. Her version is right up my alley when it comes to sharing healthy recipes.
Unlike Chipotle’s version, mine doesn’t have added vegetable oil, giving it an edge up on the fit scale.
What is also great about this recipe is that it is vegan-friendly.
For all my vegan friends, this is one of those easy vegan recipes for you all.
Add some garbanzo beans to the rice and make it a complete meal on its own. By adding the garbanzo beans, you are instantly adding in a healthy source of protein and fiber.
Some optional add in’s to rice are:
1. Black beans
2. Pico de Gallo
3. Corn

The other two main ingredients in this dish are cilantro and lime. You can also use lemon for the lime, which works just as well. As far as the cilantro, I love cilantro, so I add in a bit more.
However, feel free to do you and add in just what the recipe calls or add in less/more.

Cilantro lime rice that is a great side dish that is simple and easy to make.
Ingredients
1 cup white rice and 2 cups chicken stock, chicken broth or water
1 tabelspoon butter
1 large lime (2 tablespoons juice and 1 teaspoon zest)
1/3 cup finely chopped cilantro
Salt to taste
Instructions
1. In a medium size pot bring 2 cups of liquid to boil (either the water, chicken stock or chicken broth)
2. Stir in the butter and rice and return to a boil. Reduce the heat to low, cover and let simmer until the rice is fully cooked though and tender.
3. Once the rice is cook turn of the flame use a fork to fluff and add in the lime juice, cilantro and salt.
