Easy homemade granola

Easy homeamde granola with only 7 ingredients, chopped nuts, rolled oats, natural sweetner and all the good stuff.

Ingredients

  • 23 tablespoons real maple syrup or honey ( manuka honey is my personal choice from sprouts but any honey is fine too)
  • 2 tablespoons virgin coconut oil
  • 1/2 teaspoon vanilla extract
  • 1 large pinch of fine sea salt (about 1/8 teaspoon)
  • 2 cups whole rolled oats (aka old-fashioned oats, preferably organic)
  • 1/2 cup raw nuts, chopped (I like to use pecans and almonds; you can also throw in cashews)
  • 1/4 cup raw pumpkin seeds
  • 2 tablespoons raw sunflower seeds
  • 1/2 cup unsweetened dried fruit, chopped (optional; I like unsweetened dried cranberries)
  • 1/4 cup unsweetened coconut flakes

Instructions

Preheat the oven to 300 degrees F.

In a medium size bowl mixed together all the dry ingredients (the chopped nuts, oats, cranberries and coconut flakes) and set aside.

In another bowl add the coconut oil, vanilla, salt, honey or maple syrup (whichever you are using) give it a good mix so that all the ingredients are mixed well. Depending on if you are using liquid or solid coconut oil you may need to warm up the coconut oil so that is melted.

Next add the dry ingredients to the wet ones and with your hands (yes you will get a bit messy) and mix the ingredents well.

Once all the ingredents are mixed well pour the mixture on to a lined baking sheet lined with parchment paper and cook for about 10-12 min or untill you see that the granola is a little golden in color.
