Cilantro lime rice that is a great side dish that is simple and easy to make.
1 cup white rice and 2 cups chicken stock, chicken broth or water
1 tabelspoon butter
1 large lime (2 tablespoons juice and 1 teaspoon zest)
1/3 cup finely chopped cilantro
Salt to taste
1. In a medium size pot bring 2 cups of liquid to boil (either the water, chicken stock or chicken broth)
2. Stir in the butter and rice and return to a boil. Reduce the heat to low, cover and let simmer until the rice is fully cooked though and tender.
3. Once the rice is cook turn of the flame use a fork to fluff and add in the lime juice, cilantro and salt.
